So I saw a recipe for "Pie Crust Cookies." You essentially take left over pie crust if you're making something (or a rolled pie crust from the store if you're not), sprinkle the top with cinnamon and sugar and bake till golden. Then break it up into chunks to make the 'cookies.' I made it and it was...eh, ok.
BUT THEN! Last night as I was going to eat the last of it so it wouldn't go to waste, I was inspired! I took a scoop of Cool Whip (also so it wouldn't go to waste), crumbled in the cinnamon pie crust, mixed, and took a bite. WOW!!! Definitely an example of the whole being greater than the sum of the parts! It was delicious, delectable and delightful. I wasn't sure what to name it. Maybe Cinnamon Pie Crust Whip? But while descriptive, that didn't seem to do it justice. Really, it was just ....a Little Bit of Heaven.
Don't consume it in large quantities, or there won't be any heaven left!
