Reuben Rollups

Here's a quick and easy take on Reuben sandwiches from the 1973 Better Homes and Gardens Meals in Minutes.


Ingredients:
1 can crescent rolls (8 count)
1 package corned beef slices (located in the grocery store by the sandwich meats)
2 Swiss cheese slices, cut into 4 strips each
8 oz. sauerkraut, rinsed and well drained
1 Tbsp Thousand Island dressing

Directions:
Preheat oven as directed on crescent rolls.

Squeeze any excess juice out of sauerkraut. In a small bowl, mix with Thousand Island dressing.

On the wide end of crescent roll triangle, place 1 slice of corned beef, top with heaping tablespoon of sauerkraut and strip of Swiss cheese. Roll up and place on cookie sheet. Repeat for each roll.

Cook till golden brown. Let cool slightly (filling gets very hot) before serving warm.
Yield: 4 servings (2 rolls per serving)

*Cut everything in half (size-wise) to make Mini Reuben Rollup appetizers.
