Hearty Banana Oatmeal Muffins

Found these through Pinterest. Originally posted here. These are not light, fluffy, part-of-a-fancy-brunch muffins. These are rich, hearty, stick-to-your-ribs breakfast-on-the-run muffins. Best served warm. Delicious with Nutella. Sorry for no picture, I got distracted and mine burned a little around the edges--not very photogenic, but they still tasted great.

2 1/2 cups old fashioned oats
1 cup plain low fat Greek yogurt
2 eggs
3/4 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

1. Preheat oven to 400'F. Spray muffin tin with non-stick cooking spray or line with silicone or foil liners.
2. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth. [You may want to add the oats a cup at a time, blending between each addition.]
3. Divide batter among 12 cupcake liners, and bake for 20-25 minutes, or until a toothpick comes out clean.

Yield: 12 muffins
