I can't properly express how much I love this little side salad! I saw the original recipe as topping for rice pudding on sortedfood.com and thought that it would be tasty on it's own. I was right. :) Refreshing, delightful, and easy peasy!
1 Tbsp thinly sliced mint
1 Tbsp brown sugar
1/2 lime, juiced
shelled pistachios, optional
Mix mango, mint, sugar and juice. Garnish servings with pistachios, if desired.
The salad is also delicious without the lime juice if you don't have any handy.
Serves 2-4 depending on the size of your mango.
