I especially love recipes that don't dirty too many dishes. I'm not lazy, I'm just "energy efficient" and diligent in saving natural resources. :) This dish fits nicely into the few-dish category. One cutting board, one knife, one skillet, done. And it's quick. That sounds like a Win-Win to me!
12-14 oz. smoked sausage, sliced on diagonal
3 small to medium yellow squash or zucchini, quartered lengthwise then sliced in half
2 Tbsp Italian salad dressing
In an extra-large skillet cook sausage and squash in 2 Tbsp Italian dressing for 8 to 10 minutes or until sausage is heated through and squash is almost tender, stirring occasionally.

A shout out for this recipe! 3 zuchinnis, 2 yellow squash, and a sausage link and I'm set for work week lunches.
