Cake Mix Cookies

I have a couple of dishes that I've been meaning to get up here, but it's been busy, busy, busy. To tide you over, here is a quick and easy recipe!


1 cake mix
2 eggs
1/3 cup vegetable oil
1 cup mix-ins as desired (chocolate chips, nuts, etc.)

Preheat oven to 350'F. Lightly grease a cookie sheet or line with parchment paper. With a spoon, mix cake mix, eggs, and oil together. Stir in mix-ins. Drop dough balls onto the lightly greased cookie sheet. Bake 8-12 minutes or until light golden brown around the edges. Remove cookies and place on nonstick rack to cool. Using my cookie scoop it made approx 36- 1 1/2" cookies.

You can experiment with different flavor combinations--lemon/white choc chip, devil's food/choc chip, spice/pecans. The ones in the picture are rainbow chip cake mix with no mix-ins. For an extra fast path to sugar coma, the cookies can be frosted!
