I got this recipe from perusing a Pinterest account my SIL sent me. Here is the original link. We ate them, including the leftovers, before it occurred to me to take a picture. Oh well - I'll try and remember to take another one in the future when I make these again.
1 15 ounce can chickpeas, drained and rinsed
1 cup plain breadcrumbs
1 zucchini grated
1 small red onion, grated
1 egg lightly beaten
1 t. salt
1/4 cup extra virgin olive oil
4 whole wheat pitas
8 tender lettuce leaves
2-3 T Tzatziki sauce
Mash chickpeas in a bowl until smooth. Stir in breadcrumbs, zucchini, onion, egg and salt. Form into 7 or 8 1/2 inch thick patties.
Heat a frying pan to medium and add olive oil. Saute the patties until golden brown and crisp. About 3 minutes per side.
Halve pitas and stuff with patties, sauce and lettuce. Enjoy!

Looks interesting! Did the chickpeas get smooth enough just mashing by hand or did you have to food processorize them?
Surprisingly yes. They were very smooth. I used a potato masher and then a fork for a couple big chunks. I'll be adding more zucc in the future just to try it.
Just had these for dinner and they are VERY yummy! And I was impressed with how quickly they came together with the grating, mixing, etc. A winner!
