Strawberry Lemonade Concentrate


I came across this recipe on a blog that was showing how to make and can the concentrate. Those instructions are HERE. I didn't have that many strawberries (or lemon juice), so I made the recipe below and have it in my fridge to use in the next week or so. I may freeze some of it in an ice cube tray.

1 cup strawberries, hulled and chopped
2/3 cup lemon juice (I didn't have that much, so I made up the difference with lime juice)
1 cup granulated sugar

Puree strawberries in blender or food processor. (I had to add a little of the lemon juice for this to work.) In a stainless steel saucepan, stir together strawberry puree, juice and sugar. Heat over medium-high heat until 190'F. The original blog says Do NOT Boil. Remove from heat. (Mine was pretty frothy, so I skimmed some of that off and discarded.)

To reconstitute, the original blog said to mix equal parts concentrate and water (or soda water or ginger ale). I found that a little strong for me. I prefer 1:3 or 1:4, so taste as you mix to find your preference.

Yield: about 1 pint concentrate
