Stuffed Zucchini

We had a variation of Erika's stuffed acorn squash and I had some extra stuffing so I thought I'd make stuffed zucchini.  You can play with the stuffing and easily alter it to your likings.


4 Medium Zucchini
1 C Cooked White Rice
1 C Cooked Brown Rice
1 Cup Turkey Sausage (bulk), Cooked
1 Cup Petite Sweet Peas, frozen
1 Cup Bacon, cooked, chopped
1/2 White Onion, chopped, cooked

Preheat the oven to 350 degrees F.  Oil a 13 x 9 Pyrex or line a cookie sheet with parchment paper.

Wash zucchini, cut off ends and slice them in half lengthwise as evenly as possible.  With a spoon scoop out the seeds.  Set aside.  Dice up the seeds and add to a medium bowl.  Add all the other ingredients to the bowl and mix well.  Season as desired.  Spoon mixture into prepared zucchini halves and place on baking dish.  Bake in the oven for 30 mins or until the zucchini's are soft.  Enjoy!
