Savory Gluten-Free Crackers

I found these especially tasty with Laughing Cow spreadable cheese.


1/2 cup brown rice flour (I only had white and it was fine)
3/4 cup ground almonds(yay for spice/coffee grinder) or almond flour
2 Tbsp ground flax
1 Tbsp parmesan cheese
1/4 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp dried thyme
1 tsp dried rosemary (I rubbed mine between my palms to make the bits smaller)
scant 1/4 tsp baking soda
2 Tbsp sesame seeds
1/4 cup water
1/2 tsp olive oil

1. Preheat oven to 350'F.

2. In a large bowl, mix together the dry ingredients. Add wet ingredients and mix well with a spoon. Knead dough with hands until it comes together. Shape into a ball.

3. Place ball of dough on parchment paper. Roll out dough until is about 1/8th inch thick, or as thin as you can get it without ripping. (If you want, roll out half the dough at a time between 2 sheets of parchment paper and you can roll it really thin.) With a pizza slicer, slice into crackers. (I poked mine with a fork because I liked the look of it better.) Move parchment onto baking sheet.

4. Bake at 350'F for 15-20 minutes until slightly golden in color.  Cool on baking sheet for 10 minutes. Store in air-tight container once fully cool.
