Peanut Butter Brownie Ice Cream Dessert


1 Brownie Recipe prepared, cooled
Peanut Butter Cups, cut into pieces (I used packaged Mini's to remove that step)
Ice Cream (Vanilla Bean in photo)
Chocolate Ganache (recipe below)

Cut out equal shapes of brownie and layer with scoops of ice cream.  In the ice cream, place peanut butter cups.  Drizzle with ganache, add more pb cups and serve.  Enjoy!

Chocolate Ganache
4 1/2 ounces semi sweet chocolate pieces
1/2 cup heavy whipping cream

Place chocolate in a medium bowl.  In a small saucepan bring cream to a boil.  Once the boil starts, pour over chocolate.  Let sit 5 minutes.  Whisk until mixture is smooth and glossy.


We made this while Erika was in town.  It was delicious!
