Vicki's No-Hassle Gumbo

This recipe comes from a friend at work. She has some fast and simple recipes--perfect for Easy Peasy! This is a new one I tried this weekend.

No-Hassle Gumbo
In a medium pot, combine:

4 cups Chicken Broth
1 can Rotel Tomatoes, drained*
1 small bag frozen Okra
1 can chicken, drained

Simmer "a while" uncovered over low heat. Salt and pepper to taste. Serve over steamed rice.

*I used Mild Rotel, but if you prefer more kick to your gumbo you can use spicier Rotel.
