Here's how to get the meat out of a coconut: First, preheat your oven to 350'F. Then use a dishtowel to steady the coconut in the sink and place a chisel or screwdriver into one of the three holes. Whack the top of the screwdriver forcefully into the hole to pierce; repeat for all three holes. Pour off the liquid (that's coconut water) and reserve. Then bake the whole coconut in the oven to dry it out a little, about 20 minutes. Take it out of the oven and hit it with a hammer to crack into pieces. You should be able to pry the meat away from the shell at this point. Now, with a vegetable peeler, peel the thin brown layer from the white pieces.

Thanks for this! Unfortunately, we just spent the better part of an entire Sunday afternoon picking apart a coconut--yummy, but very time consuming! I should have read this first. :)
