No-Bake Delights, Part I: Elf Bites
1 cup peanut butter chips
2 cups Nilla wafer cookies
2 cups powdered sugar
1/4 cup water
1 Tbsp corn syrup
1 cup mini chocolate chips
1 cup granulated sugar
1. Grind together peanut butter chips and vanilla wafers in a food processor or blender. Add powdered sugar and process until combined.
2. In a bowl, mix crumbs with water and corn syrup until they form a mass. Stir in chocolate chips. (Add more water if mixture seems too dry and will not hold its shape when rolled into a ball. Add more powdered sugar if mixture seems to moist to hold its shape.)
3. Form 1" balls. Place granulated sugar in a shallow bowl and roll balls in the sugar. Store in an airtight container with wax paper between the layers.
Makes about 48 balls.

The recipe where I got these said they taste better after a couple of days. I made them Friday night and my co-workers are going crazy over them today (Monday). They give them two thumbs up!
