Amazingly Easy Super Duper Pumpkin Cookies

Credit for these goes to Sister Roscher in our ward--she brought them to choir practice and had an instant fan club. Our delight only grew when she shared how easy they were to make. Perfect for Easy Peasy!


Mix together:
1 package Spice Cake mix
1 15-oz can of Pumpkin (not pumpkin pie filling)
1-1 1/2 cups chocolate chips.

Drop by teaspoonfuls onto cookie sheet. Flatten slightly, if desired.  Bake at 350'F for 12 minutes.
Makes approx. 4 dozen

I recommend lining cookie sheets with parchment paper (or spraying with Pam) so the cookies release easier. Store in airtight container with wax paper between the layers.

For an even more deluxe treat, keep a can of cream cheese frosting handy....

This looks like my kind of recipe!! I'm pretty sure I even have all the ingredients on hand so this weekend the kids and I can whip up a batch :)
