Forgotten Cookies

My co-worker introduced me to these little darlings. She learned them from her 102-year-old grandmother. Another friend says they remind her of the meringues she had in England. They make a sweet and delicate holiday cookie. Enjoy!


Ingredients:
3 egg whites, room temperature
1 cup granulated sugar
1 tsp vanilla
1 cup chopped pecans
1 cup chocolate chips

1. Preheat oven to 350'F. Line cookie sheets with foil. (If you don't have enough cookie sheets for 3 dozen cookies, remove and foil the oven racks.
2. Whip the egg whites until frothy, gradually add sugar and vanilla. Beat until stiff peaks form.
3. Fold in chocolate chips and nuts.
4. Drop by teaspoonfuls onto the cookies sheets.
5. Put in the oven and turn the oven off.  Leave the cookies in the oven at least 8 hours, or overnight. (If you open the door to check on them, they will fall, so forget about them!)

Makes 3 dozen

Like delicate, crumbly little sweet clouds, with a hint of chocolate and nut. Fairly sweet, so one at a time is usually good. I prefer mine with milk.

So Erika--do you eat all of this yummy goodness that you keep posting? Or do your neighbors and co-workers just love you lots because you keep giving them delicious food?
