zuchhini chips and buttermilk-yogurt ranch dressing



1 med. zucchini, sliced into chips
1/4 c Panko breadcrumbs
2 T fresh, grated parmesan cheese
2 t herbs (parsley, basil, thyme, oregano - you pick how much of what)
1/2 t garlic powder
salt and pepper
1 egg, beaten + 2 T milk

Preheat oven to 400'F. Spray baking sheet with cooking spray. Combine all dry ingredients in a bowl. Dip zucchini in egg+milk mixture then coat in breadcrumb mixture. Bake for 15 minutes, rotating once.

The original recipe I found just baked the zucchini, but I thought it was a little soggy, so I also fried the baked zucchini for 1-2 minutes on each side to crisp up. If you like your zucchini soft, baking is enough.

Dressing:
1/2 c buttermilk
5 T plain (Greek) yogurt
1 T dried parsley
1/2 t dried dill
1/2 t garlic powder
1/2 t onion powser
salt and pepper

Whisk together and serve.

We made these last night. We bought a slotted grilling pan so that they'd not get soggy. They were crisp & super tasty! Thanks for posting this.
