tomato basil soup

this is one of our favorites- i will add a photo when i charge my camera battery. it takes 20 minutes and is moderately healthy. this recipe should serve approximately 8 people as a side or 5-6 as a main dish.

  • 2 (28 ounce) cans diced or crushed tomatoes
  • 2 cups chicken broth (the best thing in my kitchen is chicken base or chicken boullion instead of buying all those cans!)
  • 18 fresh basil leaves, minced
  • 1 teaspoon sugar
  • 1/2 cup whipping cream
  • 1/2 cup nonfat milk
  • 4 T. butter or margarine

Directions

  1. In a large saucepan, bring the tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes. Add basil and sugar. Reduce heat to low; stir in creammilk and butter. Cook until butter is melted.
